The originators of Awadh were the inventors of the dum style of cooking, and this proud condition continues to this day. The dum style of cooking involves cooking food slowly and carefully over a low fire. This low and slow style of cooking enhances the flavor of vegetarian dishes, brings out the best in all manner of meats and creates food that is truly worthy of the royal class.
