Awadh cuisine is native to the capital of Uttar Pradesh in Northern India, a city known as Lucknow. Taking cues from the cuisine of the Middle East and Central Asia as well as neighboring parts of Northern India, Awadh cuisine encompasses a wide variety of both vegetarian and meat-based dishes.
At The Nawab’s Kitchen, we take the prestige of Awadh cuisine very seriously, and we work hard to make every dish we serve worthy of the kings and queens who have historically enjoyed these very special meals. The originators of Awadh were the inventors of the dum style of cooking, and this proud condition continues to this day.
The dum style of cooking involves cooking food slowly and carefully over a low fire. This low and slow style of cooking enhances the flavor of vegetarian dishes, brings out the best in all manner of meats and creates food that is truly worthy of the royal class.
